Default How do I practice tackoff when there are no other planes to choose from?

I want to practice tackoff and landing but in single player game there is only that crappy yellow plane to choose from. I want to practice in other planes but cannot figure out how

A quick and simple way to begin with is to choose the cross-country mission and change the aircraft.

As the other gentleman said, Cross-Country allows you to man any flyable.
And PS- Please do not call the Tiger Moth "crappy".
